Cumpanzos Farm was established in Olmedo in 2010, and is characterized by the production of Saffron under Organic Farming. Cumpanzos takes care of all the production stages, which are strictly manual, from planting the bulbs to harvesting, hulling, drying and packaging the pure Saffron in stigmas. Laboratory analyses carried out on the product give it First Category status. Since 2013, Cumpanzos has also been an Educational Farm, and it promotes educational courses aimed at students of all levels, actively involving them in learning saffron cultivation techniques, and offering the opportunity to learn about the profession and social role of the farmer in order to educate them about conscious consumption and respect for the environment. It offers guided tours with tasting, aimed at all people interested in learning about the cultivation stages of saffron and its use in cooking.
