Soberana Mandrolisai DOC red 2021

The 2021 Soberana Mandrolisai DOC Rosso from Cantina Soberana is a Mandrolisai DOC red wine made from Bovale Sardo, Cannonnau, Monica, and other native grape varieties. After careful manual selection of the grapes, spontaneous fermentation takes place at controlled temperatures. Ruby red in color with purple reflections, it is consistent, lively, and slightly transparent. The nose is quite intense, complex, and refined. It immediately offers sensations of fresh fruitiness of red berries and gooseberry, currant, and black cherry, and continues with pleasant spicy notes reminiscent of gentle black pepper, followed by floral hints of clove and a finish of undergrowth. The palate is taut, dry, and smooth, for a glass of excellent freshness and an immediately evident tannic texture. Intensity, persistence, and flavorful quality give the sip pleasant hints of red fruit and spice. Excellent with traditional Sardinian meat dishes, including game, pork ribs, and aged cheeses. Served chilled, we recommend pairing it with dishes such as tuna steak or tuna braised in red wine.
